This is our current favourite: creamy pasta salad with cold smoked salmon. The salad is perfect for lunch or dinner on hot summer days, and is equally good in the campervan or on a picnic. Great with a cold beer or some sparkling wine!

We mix boiled pasta (such as pasta shells) with pieces of cold smoked salmon, chopped boiled egg, rum sauce (we buy ready-made in a jar) and some mixed vegetables. The vegetables we use depend on what we have at home, but for example, pieces of yellow pepper, thinly sliced carrot, sliced radish and some cooked peas are good. This salad is easy to make and is both tasty and filling.
