Celebrate with luxurious canapés

Did we celebrate an anniversary or even a birthday? No, not at all! Possibly we were celebrating all the work we put into the blog! All the appetisers Peter offered were cruel good, so here are some approximate recipes. That's how he cooks, on one hip. But it will be good, we promise!

Bruschetta with chèvre, honey and walnuts

Cut semi-thick slices of baguette and spread on chèvre cheese, drizzle with honey and sprinkle with chopped walnuts. Then bake in the oven for 5-7 minutes. Mmmm! Goes really well with cava I can tell you!

Bruschetta with scrambled eggs and salmon

Cut semi-thick slices of baguette, drizzle with a little oil and grill in the oven for 5-7 minutes. Mix cold smoked salmon, boiled egg, crème fraiche and dill. Add the mixture and decorate with prawns and dill!

Thin bread slices with salmon and horseradish

So, horseradish! You don't get it very often these days, but it's delicious! Spread cream cheese on a flatbread, top with cold smoked salmon, grate horseradish and sprinkle with chives. Roll and cut into reasonably thick pieces.

Slices with avocado and prawns

Mix the avocado with crème fraiche and grated lemon zest. Place the mixture on a small piece of wholemeal bread and top with prawns.

Cutlets with smoked salmon and mould cheese cream

Mix the Saint Agur mould cheese with crème fraiche. Place a piece of cold smoked salmon on some wholemeal bread, spread the mixture over it and top with sliced radishes and dill sprigs.

Puff pastry rolls with chèvre and fig jam

Lay out the puff pastry and spread the fig jam, crumble the chèvre and sprinkle with chopped walnuts. Roll up and cut into 3 cm thick pieces. Then bake in the oven for 15 minutes at 175 degrees. Voilá!

What a Friday dinner! Wow! Of course, it's great to choose one or two of the cuts and serve them as a small appetiser instead. Which one do you like? Do you have another favourite that you usually make?
