3-course menu with seafood

Today is Friday and I (Helena) am at a conference all day and will be late home. But until we take the weekend for real, we can think back to last weekend's festive dinner. On Sunday we had a 3-course menu with seafood here in the houseboat.

If you follow our blog, you may have noticed that Peter is in a "cooking flow" right now. He's trying out all sorts of new ingredients and dishes, especially when it comes to seafood.

Cleaning the freezer

You won't believe it, but this menu was composed by Peter (using various recipes from the internet) after he started cleaning out his freezer. What do you have in the back of the freezer? We had a small bucket of scallops ...

We bought them when we had guests some time ago, and now there were many left. Therefore, we had a 3-course menu with seafood, where scallops were included both in one of the starters and in the main course. Dessert is not so much of our thing so we skipped it ...

Starter 1: Sardines on bruschetta

As a first starter, we got a buttered small slice of bread with super tasty "toppings". Peter scalded tomatoes and fried them together with garlic and parsley. Then he gratinated sardines with the "filling" on top and some grated cheese in the oven. And finally, he put everything on the buttered bread slices.

Starter 2: Scallops in pea puree

The second starter is my absolute favourite in this whole menu. Soooo good! If you want, you can make a little less pea puree and serve it on a flat plate instead. To make the purée, boil the peas and mix them with crème fraiche. You can see the whole recipe in the video!

Main course: Seafood gratin

The main course was a gratin with scallops, prawns and crayfish tails together with a lobster-flavoured sauce. This was served with oven-baked mashed potatoes and boiled broccoli.
